Nancy's Frittata Recipe

My sister Nancy sent this recipe out today to the family. It looks great. We will definitely have to try it...
FRITTATA

Note:  A frittata is an Italian omelet.  Italians sometimes take a slice of Frittata in their lunch.  I started with the Baked Asparagus and Yellow Pepper Frittata that I found on my iPhone Epicurious app and then revised it a little.  Here is the link to the original: http://www.epicurious.com/recipes/food/views/Baked-Asparagus-and-Yellow-Pepper-Frittata-101499

If you search frittata ingredients, you will find that you can include just about anything.  The common denominator is that it is held together with eggs.  Depending upon what you mix in, it could be a great low-carb meal.

Here is how I made it:
  • 1 pound hot bulk sausage – fried into bite sized pieces
  • 1 ham slice – cubed
  • 1 pounds thick asparagus with hard ends removed – boiled for about 5-7 minutes so that they are soft, but not mushy – and cut into bite sized pieces.
  • 1 large yellow bell pepper – diced
  • 1 medium onion - chopped
  • 1 medium zucchini – chopped into small pieces
  • 12 cherry tomatoes – cut in half
  • 1 tablespoon butter
  • 10 large eggs
  • 1/2 cup heavy cream
  • 2 cups shredded cheddar cheese (reserve ½ cup for top) 
  • 3 tablespoons chopped fresh flat-leafed parsley leaves
  • 1 tablespoon chopped chives
  • 1 teaspoons salt
  • 1/4 teaspoon freshly ground black pepper

Preheat oven to 350°F. and butter a 13 x 9 x 2-inch glass baking dish (3-quart). 
In a large skillet cook bell pepper, onion, and zucchini in butter over moderately low heat, stirring occasionally, until peppers are softened, about 10 minutes.
In a large bowl whisk together eggs, cream, parsley, chives, salt, and pepper. Stir everything (except ½ cup cheddar cheese) together in a big pot.  

Pour into baking dish and top with remaining ½ cup cheese. 


Bake in middle of oven until golden and set, about 35 – 50 minutes. Cool frittata on a rack.

You can make a frittata the day before you need it.  Just cover and chill.  

This 13x9 baking dish makes eight LARGE portions that I cut and freeze.  

To cook, I thaw one piece in the microwave on defrost for about 8 minutes.  Then I break it apart and cook on high until hot – about 40 seconds.  

It makes a great, quick, nutritious, low-carb meal for breakfast.
