Coconut Delight with Red Fruits

We are pleased to introduce our new post category Kitchen Secrets. Here we present recipes and images of our home prepared dishes as well as cooking tips.

Our first recipe is Coconut Delight with Red Fruits

This makes a nice paleo/low-carb dessert, but it can also be served with coffee or tea, as birthday "cake", as a snack or whenever you feel like it (and that will be quite often).

Ingredients

  • 2 cans (14 fl oz./400 ml each) of coconut milk (preferably without additives and organic)
  • 1 cup (225 g) of (frozen) red fruits (e.g. raspberries, blueberries, blackcurrants, red currants, blackberries)
  • 10 (about 0.66 oz. / 19 g) gelatin sheets (pure gelatin, no flavour, no sugar)
  • salt & pepper (optional)

Method

  1. Soak the sheets of gelatin in a small bowl of cold water for 5 to 10 minutes
  2. Cover the inside of a mold with some household foil (simplifies the unmolding)
  3. During soaking, pour the coconut milk into another bowl and stir it well
  4. Put about 1 glass of the coconut milk into a saucepan and warm it (not boiling!)
  5. Once the gelatin sheets are soft, lift them from cold water and gently remove the excess water
  6. Add them in the saucepan with the warm coconut milk, stirring just until melted completely
  7. Stir the red fruits into the bowl with coconut milk
  8. Add a pinch of salt and fresh ground pepper (optional)
  9. Pour the gelatin mixture gradually while stirring
  10. Put the whole mixture into the mold
  11. Refrigerate for about 3 hours
  12. To unmold your Coconut Delight, put a plate on top of the mold and turn it over
  13. Finally decorate with some red fruits before serving
